Saturated fat has gotten such a bad rep but, as this article argues, not all saturated fats are created equal. I use only unrefined, unprocessed extra virgin coconut oil - in small amounts - in Jen's Jars soups!
Who would've thought? Cooking carrots actually makes the Beta Carotenes, an antioxidant converted by the body into Vitamin A, more readily available! That's not to say raw carrots aren't incredibly nutritious as well. You really can't go wrong with this staple!
My favorite for medium heat? Unrefined extra virgin coconut oil. For high heat? Unrefined avocado oil. I prefer my EVOO raw.
